No-sugar-added millet and goji berry breakfast cookies

Ingredients
- 1 cup (250 mL) of quick oats
- 1 1/2 cup (375 mL) of flour
- 1/4 cup (60 mL) of Oatbox millet and goji berry granola
- 1 tsp (5 mL) of baking powder
- A pinch of salt
- 2 ripe bananas, mashed
- 1 apple, grated
- 1 tsp (5 mL) of vanilla extract
- 2 tbsp (30 mL) of melted coconut oil
- 1 egg
Preparation
- 1. Preheat the oven to 375°F.
- 2. Mix together all the dry ingredients. In a second larger bowl, mix together all the wet ingredients. Incorporate the dry mix to the wet mix using a wooden spoon.
- 3. Using an ice cream scoop, shape 14 balls of equal sizes, and lay them unto a baking sheet covered with parchment paper.
- 4. Bake for 22 minutes.
