No-sugar-added millet and goji berry breakfast cookies

Ingredients

  • 1 cup (250 mL) of quick oats
  • 1 1/2 cup (375 mL) of flour
  • 1/4 cup (60 mL) of Oatbox millet and goji berry granola
  • 1 tsp (5 mL) of baking powder
  • A pinch of salt
  • 2 ripe bananas, mashed
  • 1 apple, grated
  • 1 tsp (5 mL) of vanilla extract
  • 2 tbsp (30 mL) of melted coconut oil
  • 1 egg

Preparation

  1. 1. Preheat the oven to 375°F.
  2. 2. Mix together all the dry ingredients. In a second larger bowl, mix together all the wet ingredients. Incorporate the dry mix to the wet mix using a wooden spoon.
  3. 3. Using an ice cream scoop, shape 14 balls of equal sizes, and lay them unto a baking sheet covered with parchment paper.
  4. 4. Bake for 22 minutes.
