Baked Oatmeal

Ingredients
- 1 tbsp of melted coconut oil
- 2 bananas
- 2 cups of sliced strawberries
- 1 cup of quick oats
- 2 cups of your choice of Oatbox granola
- 1 cup of rolled oats
- 1 tsp of ground nutmeg
- 1 pinch of salt
- 2 tsp of baking powder
- 3 eggs
- 2 cups of buttermilk
- 30 ml of maple syrup
- 3 tbsp of melted coconut oil
- 5 ml of vanilla
- Olympic Organic Lemon yogurt
Preparation
- 1. Preheat oven to 350°F.
- 2. Grease a pyrex style pan with a tablespoon of coconut oil.
- 3. Mash bananas at the bottom of the pan and add strawberries on top.
- 4. In a large bowl, combine all dry ingredients.
- 5. In another bowl, whisk eggs for 2 minutes and add buttermilk, maple syrup, melted coconut oil and vanilla. Whisk again and pour mixture over dry ingredients.
- 6. Mix well and spread on top of strawberries.
- 7. Bake for 35 minutes.
- 8. Serve with Olympic organic lemon yogurt. Oatmeal can be kept for up to 5 days in the refrigerator.
