Banana and Coconut Pancakes

Ingredients

  • 1 ripe banana
  • 1 egg
  • 1/2 cup of coconut cream
  • 5 ml of vanilla
  • 1/4 cup of quick oats
  • 1/2 cup of flour
  • 5 ml of baking powder

Preparation

  1. 1. In a large bowl, mash the banana. Add the egg, coconut cream and vanilla, and whisk until smooth. Incorporate quick oats and mix well. Add flour and baking powder and whisk again.
  2. 2. In a non-stick pan, heat 10 ml of coconut or canola oil and, at medium heat, cook 1/3 cup of the pancake mix at a time. Cook on each side.
  3. 3. Serve with yogourt, Oatbox granola et your favourite fruit for a full breakfast!
