Banana and Coconut Pancakes

Ingredients
- 1 ripe banana
- 1 egg
- 1/2 cup of coconut cream
- 5 ml of vanilla
- 1/4 cup of quick oats
- 1/2 cup of flour
- 5 ml of baking powder
Preparation
- 1. In a large bowl, mash the banana. Add the egg, coconut cream and vanilla, and whisk until smooth. Incorporate quick oats and mix well. Add flour and baking powder and whisk again.
- 2. In a non-stick pan, heat 10 ml of coconut or canola oil and, at medium heat, cook 1/3 cup of the pancake mix at a time. Cook on each side.
- 3. Serve with yogourt, Oatbox granola et your favourite fruit for a full breakfast!
