Belgian style pumpkin waffles

Ingredients

  • 6 eggs, whites separated in a second bowl
  • 3⁄4 cup of softened butter
  • 1 tsp vanilla
  • 1 cup of sugar
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground clove
  • 1 cup of milk
  • 2 1⁄2 cups of flour
  • 3⁄4 cup of Pumpkin Spice Oatbox granola
  • 1⁄2 cup of pumpkin puree

Preparation

  1. 1. Beat the egg yolks, butter, vanilla and sugar until light and fluffy.
  2. 2. Mix the spices with the flour. Add 1/3 of the flour and milk to the base, alternating until fully combined. Make sure to finish with the flour for best results. Add in the pumpkin puree and mix well.
  3. 3. Beat egg whites until stiff and fold into mix.
  4. 4. Cook in a waffle iron and top with warm apples, maple syrup, and Pumpkin Spice Oatbox granola.
