Overnight Blueberry and Coconut Parfait Jam
- 3 minutes
- Serves 4
- 1 cup fresh or frozen blueberries
- ½ cup dried grated coconut
- ¼ cup of honey or maple syrup
- Juice of half a Meyer lemon
- 1. Mix all ingredients together in a bowl.
- 2. Let sit in refrigerator or on the counter overnight.
- 3. At morning, use the jam in a parfait with Oatbox granola.
