Ingredients

  • 1 cup of spelt bran or oats
  • 1 cup of flour
  • ½ cup of almond and vanilla Oatbox granola
  • 1 tsp of baking powder
  • ½ tsp of baking soda
  • 1 cup of nature or vanilla Olympic yogurt
  • The juice of half a lemon
  • 5 ml of vanilla
  • 2 eggs
  • 30 ml of soft butter
  • 45 ml of molasses
  • 30 ml of brown sugar
  • ½ cup of dried cranberries

Preparation

  1. 1. Preheat oven to 350°F.
  2. 2. Mix yogurt, lemon juice, spelt bran and vanilla together.
  3. 3. In another bowl, mix flour, granola, baking soda and baking powder.
  4. 4. Using a stand mixer, beat eggs, butter, molasses and brown sugar until the mixture is uniform.
  5. 5. Using a wooden spoon, add the yogurt mixture and dry ingredients to the egg mixture. Add the dried cranberries and mix just until everything is incorporated.
  6. 6. Fill 12 muffin cups provided with paper liners. Bake 15 to 20 minutes.
