- For the crust:
- 1 cup of Medjool dates
- 1 cup of Almond Crunch & Millet Oatbox granola
- 1/4 cup of raw and unsalted cashews
- 1/4 cup of almonds
- 1/4 cup of honey
- 2 tbsp of ground flaxseed
- 2 tbsp of cocoa
- 1 cup of unsweetned coconut, shredded
- For the filling:
- 1 1/2 cup of Olympic organic lemon-flavoured or nature yogurt
- 1 cup of fresh fruit
- The grated zest of half a lemon
- 1. In a food processor, process all ingredients for the crust until smooth.
- 2. Firmly press the mixture into a pie dish until it becomes dense and firm.
- 3. Fill the crust with yogurt, and top with fresh fruit and lemon zest. Serve and enjoy immediately.
