Ingredients
- 2 toasts
- For the almond ricotta:
- 1 cup of almonds
- 2 tbsp of rice milk (or any dairy free milk)
- 1 tbsp of fresh lime juice
- 2 tbsp of honey or maple syrup
- A pinch of salt
- For the topping:
- 1/2 cup of fresh fruit
- 1/4 cup of Matcha, Coconut & Mulberry Oatbox granola
- 1 tbsp of honey or maple syrup
Preparation
- 1. Soak almonds in fresh water for 2 hours.
- 2. Drain almonds and process all ricotta ingredients in a blender until smooth.*
- 3. Spread on toasts and top with fresh fruit, granola and a drizzle of honey or maple syrup
*The ricotta can be prepared in advance and can be kept up to one week in the refrigerator until ready to use.
