  • Rest 2 hours
  • 2 portions


  • 2 toasts
  • For the almond ricotta:
  • 1 cup of almonds
  • 2 tbsp of rice milk (or any dairy free milk)
  • 1 tbsp of fresh lime juice
  • 2 tbsp of honey or maple syrup
  • A pinch of salt
  • For the topping:
  • 1/2 cup of fresh fruit
  • 1/4 cup of Matcha, Coconut & Mulberry Oatbox granola
  • 1 tbsp of honey or maple syrup


  1. 1. Soak almonds in fresh water for 2 hours.
  2. 2. Drain almonds and process all ricotta ingredients in a blender until smooth.*
  3. 3. Spread on toasts and top with fresh fruit, granola and a drizzle of honey or maple syrup

*The ricotta can be prepared in advance and can be kept up to one week in the refrigerator until ready to use.
