  • 1/4 cup of black chia seeds
  • 1/2 cup of yogurt
  • 1 cup of flour
  • 2 tsp of baking powder
  • 1 tsp of baking soda
  • 1/2 cup of softened butter
  • 1/2 cup of sugar
  • 2 eggs
  • 1 cup of milk
  • 1 cup of Oatbox granola


  1. 1. Preheat oven to 350°F.
  2. 2. Mix together the chia seeds and yogurt. Set aside to allow the chia seeds to inflate.
  3. 3. In a bowl, mix together the flour, baking powder and baking soda. Set aside.
  4. 4. In another bowl, beat the butter and sugar to a cream. Add the eggs and yogurt, and mix thoroughly. Incorporate half of the dry ingredients alternately with the milk. Once the mixture is smooth, add the granola.
  5. 5. Spread the batter into 10 muffin cups and bake for 25 minutes or until a toothpick comes out clean.
