- One fennel head, washed and cut in fine strips
- One radicchio lettuce, washed and cut in small pieces
- One kale bunch, washed, stalk removed and cut in pieces
- ½ cup of spiced pecans, ginger and oranges Oatbox granola
- ⅓ cup of extra virgin olive oil
- 2 tbsp of apple cider vinegar
- 2 tbsp of unsweetened cranberry juice
- 1 tbsp of honey
- ½ tsp of ground cinnamon
- 1 tbsp of soy sauce
- Pepper, to taste
- 1. In a big bowl, mix the fennel, the radicchio and the kale.
- 2. In a separate container, mix all ingredients for the dressing and pour on the salad.
- 3. Plate the salad into a dish of your choice and sprinkle with your Oatbox granola right before serving.
