Coconut Date Squares

Coconut Date Squares

Ingredients

  • For the date puree :
  • 3 cups of chopped dates
  • 1 cup of water
  • 1 tsp of baking soda
  • 2 tbsp of fresh lemon juice
  • 2 tbsp of coconut sugar
  •  
  • For the crunch :
  • 1 ½ cup of quick oats
  • 1 ½ cup of coconut flour
  • 1 cup of Carrot Cake Oatbox granola
  • ½ tsp of baking powder
  • 1 cup of melted butter
  • ½ cup of coconut sugar

Preparation

  1. 1. Preheat oven to 350°F.
  2. 2. For the date puree : In a saucepan, mix dates, water, lemon juice and coconut sugar. Heat over medium heat and stir until mixture is pureed.
  3. 3. Add baking soda and mix 3 to 5 minutes. Turn off heat and set aside.
  4. 4. For the crunch : In a bowl, mix together all the ingredients for the crunch.
  5. 5. In a square pan lined with parchment paper, firmly press half of the crunch mixture and top with the date mixture.
  6. 6. Evenly add the second half of the crunch and bake for 40 minutes. Let cool completely before cutting into squares.
