Coconut Date Squares

Ingredients
- For the date puree :
- 3 cups of chopped dates
- 1 cup of water
- 1 tsp of baking soda
- 2 tbsp of fresh lemon juice
- 2 tbsp of coconut sugar
- For the crunch :
- 1 ½ cup of quick oats
- 1 ½ cup of coconut flour
- 1 cup of Carrot Cake Oatbox granola
- ½ tsp of baking powder
- 1 cup of melted butter
- ½ cup of coconut sugar
Preparation
- 1. Preheat oven to 350°F.
- 2. For the date puree : In a saucepan, mix dates, water, lemon juice and coconut sugar. Heat over medium heat and stir until mixture is pureed.
- 3. Add baking soda and mix 3 to 5 minutes. Turn off heat and set aside.
- 4. For the crunch : In a bowl, mix together all the ingredients for the crunch.
- 5. In a square pan lined with parchment paper, firmly press half of the crunch mixture and top with the date mixture.
- 6. Evenly add the second half of the crunch and bake for 40 minutes. Let cool completely before cutting into squares.
