Lemon Poppy Crepes

Lemon Poppy Crepes

Just the right touch of acidity, these crepes will delight all sweet tooths! Add granola and yogurt to combine textures.

INGREDIENTS

 

1 ¼ cups of flour
1 2/3 cups of oat m*lk
2 eggs or 120g of unsweetened applesauce
¼ cups of melted butter or oil
A pinch of salt
1 lemon's zest
1 tbsp of poppy seeds
Oatbox Coconut and Blueberry granola, to taste
Lemon vegan yogurt, to taste
Fresh blueberries, to taste

 

PREPARATION

 

1. In the blender, combine all the ingredients except the granola, yogurt and blueberries.

 

2. Once the ingredients are well mixed, spread 1/3 cup of the crepe mix at a time on a non-stick lightly buttered pan.

 

3. Fold the crepes in four and stuff them with granola, yogurt or blueberries, to taste!
