Ingredients
- 1 cup of flour
- 1 cup of Oatbox Pumpkin Spice Granola
- 5 ml of baking powder
- 5 ml of cinnamon
- A pinch of salt
- 1/2 cup of canola oil
- 3/4 cup of brown sugar
- 5 ml of vanilla extract
- 2 eggs
- 1/4 cup of milk
- For the pumpkin topping:
- 1 1/2 cup of pumpkin purée
- 3/4 cup of mascarpone
- 1/4 cup of brown sugar
- 1 tsp of vanilla extract
- 1/2 tsp of nutmeg
- 1/2 tsp of ground ginger
- 1/2 tsp of cinnamon
- 1/4 tsp of clove
- 2 eggs
Preparation
- 1. Preheat oven to 350°F.
- 2. In a bowl, mix the flour with the granola, baking powder, cinnamon and salt. Set aside.
- 3. In a second, larger bowl, whip the oil with the brown sugar and vanilla. Add the eggs and whip again.
- 4. Incorporate the dry ingredients to the wet ingredients using a wooden spoon. Add the milk and mix well.
- 5. Transfer the dough into an oiled square or rectangular 9-inch pan.
- 6. For the pumpkin topping, whip all the ingredients together and spread the mixture onto the dough.
- 7. Bake for 40 minutes and let cool down for 20 minutes before unmolding and serving.
