Oatbox pumpkin bars recipe

Ingredients

  • 1 cup of flour
  • 1 cup of Oatbox Pumpkin Spice Granola
  • 5 ml of baking powder
  • 5 ml of cinnamon
  • A pinch of salt
  • 1/2 cup of canola oil
  • 3/4 cup of brown sugar
  • 5 ml of vanilla extract
  • 2 eggs
  • 1/4 cup of milk
  • For the pumpkin topping:
  • 1 1/2 cup of pumpkin purée
  • 3/4 cup of mascarpone
  • 1/4 cup of brown sugar
  • 1 tsp of vanilla extract
  • 1/2 tsp of nutmeg
  • 1/2 tsp of ground ginger
  • 1/2 tsp of cinnamon
  • 1/4 tsp of clove
  • 2 eggs

Preparation

  1. 1. Preheat oven to 350°F.
  2. 2. In a bowl, mix the flour with the granola, baking powder, cinnamon and salt. Set aside.
  3. 3. In a second, larger bowl, whip the oil with the brown sugar and vanilla. Add the eggs and whip again.
  4. 4. Incorporate the dry ingredients to the wet ingredients using a wooden spoon. Add the milk and mix well.
  5. 5. Transfer the dough into an oiled square or rectangular 9-inch pan.
  6. 6. For the pumpkin topping, whip all the ingredients together and spread the mixture onto the dough.
  7. 7. Bake for 40 minutes and let cool down for 20 minutes before unmolding and serving.
