1. In a saucepan, bring to a boil the sugar, honey, water and salt.
2. Once the sugar is completely dissolved, add the sesame seeds and the granola while stirring. Continue cooking over medium-high heat for 5 to 10 minutes, stirring constantly until the caramel is golden brown. The mix should boil at this point.
3. Once the caramel is golden brown, remove from heat and add the butter and vanilla extract while stirring. Once all the ingredients are incorporated, add the baking soda while constantly stirring. Pour the caramel onto a sheet of parchment paper and spread it out to about a 5 mm thickness.
4. Let cool completely before breaking into pieces.
